Clinical nutritionist Sarah Di Lorenzo joined us with some tasty recipes to get even the fussiest eater having fun with wholesome meals.
Healthy blueberry and banana oat pancakes
Ingredients

- 1 cup of rolled oats
- 1/2 cup of blueberries
- 2 eggs
- 2 very ripe bananas
Method
- Mash the bananas with a fork properly. Whisk the eggs after which mix the bananas with egg, add the oats, combine properly after which the blueberries.
- Cook in a non-stick fry pan round 3 to 4 minutes both sides till golden brown.
- Enjoy with freshly chopped banana, berries and a drizzle of maple syrup.
Purple smoothie
Serves 2
Ingredients
- 1 cup of frozen blueberries
- 1 frozen very ripe banana
- 1 cup of spinach or kale
- 1 cup of milk
- 2 tablespoons of greek yoghurt
- 1 tablespoon of peanut butter
- 4 cubes of ice
- 1 teaspoon of honey (non-obligatory)
